Pork & Baby Corn Stir-fry
(Serves 2 females or 2 males)
Ingredients
- Pork fillets: 2 x 120g (females) OR 2 x 220g (males), cut into strips
- 4 Cloves garlic, crushed
- 8 Medium mushrooms, finely sliced
- 1 Cup green beans, chopped into 2cm match sticks
- 1 Cup baby corn, halved
- 2 Stalk of shallots, finely chopped
- 1 Tablespoon fish sauce
- 1 Tablespoon salt reduced soy sauce
- 2 Teaspoons of chilli paste
- 1 Tablespoon olive oil
Method
- Heat the olive oil in a medium fry pan or wok on medium heat, then add pork and toast until just browned.
- Add the garlic, mushrooms, beans, baby corn and shallots and stir-fry for 3-4 minutes.
- Add the fish sauce, soy sauce and chilli, combine well and stir-fry for a further 3 minutes.
- Serve immediately alone or on a bed of Cauliflower rice.
