Spicy Guacamole Dip

(Serves about 4)

Ingredients

  • 2 Small ripe avocados, halved, stones removed, peeled  
  • 2 Garlic cloves, crushed 
  • 1 Small fresh red chilli, deseeded, finely chopped 
  • ½ A small fresh lemon juiced 
  • ½  Small red onion, finely chopped 
  • 1 Medium tomato, finely chopped
  • Salt & ground black pepper, to taste
  • Assorted raw vegetables cut into sticks for dipping

Method

  1. In a medium bowl, add avocado flesh and mash using a fork until almost smooth.
  2. Add the lemon juice, salt, pepper and chilli and combine well.
  3. Taste to ensure you are happy with the flavour, add more salt and pepper if desired. Refrigerate until serving time.
  4. In a small bowl, add the onion, tomato, and garlic, and mix well. Taste and season with salt and pepper. Refrigerate until serving time. 
  5. Place the avocado dip in a medium serving bowl, add the tomato mix around the sides. 
  6. Obtain a large plate, put the dip in the middle and arrange the assorted raw vegetables around the sides. 
  7. Serve as a snack.
