100g (~1 cup) frozen spinach

2 teaspoons extra light cream cheese

2 teaspoons light ricotta cheese

Small sprinkling Parmesan cheese (optional)


1 Serve
  1. Defrost spinach and squeeze all water from it.
  2. Place spinach in a food processor, along with cheeses and blend until smooth.
  3. Serve with vegetable crudites or Tony Ferguson Ancient Grain Corn Chips.

Vegetable Crudites can include celery, carrot or capsicum cut into sticks, cherry tomatoes, broccoli florets or sliced green beans.
