Sweet & Sour Pork
160g lean pork fillet, sliced
½ cup cooked Basmati rice
½ cup pineapple pieces in natural juice
¼ cup onion, sliced
½ cup red capsicum, sliced
½ cup green beans, sliced
½ cup broccoli, small florets cut in half
2 teaspoons tomato sauce
2 teaspoons soy sauce*
1 teaspoon white vinegar
1 teaspoon cornflour
½ teaspoon minced garlic or 1 garlic clove, finely chopped
*Note: use gluten free soy sauce if you are gluten intolerant.
Drain pineapple, keeping juice. Prepare rice according to packet instructions.
Combine 1 tablespoon pineapple juice, vinegar, tomato sauce, soy sauce and cornflour together in a bowl.
Heat a non-stick frying pan and spray with oil. Add onions and garlic and cook, stirring, for 2-3 minutes until soft. Add pork and cook for 3-4 minutes until starting to brown. Add capsicum, beans and broccoli and cook for 5 minutes until vegetables are starting to go soft.
Add pineapple pieces and sauce and stir through to combine. Cook for 3-5 minutes until sauce is heated through and starts to thicken.
